Zach Smith’s company can’t keep up with orders for its locally loved kombucha. It’s a good problem to have, said the career food and beverage pro who launched Dalai Sofia in 2016.

Back then, the fermented tea was brewed in buckets and poured into repurposed barbecue sauce bottles. Now, flavors like Bucci Mane and Salty Ginger are sold in cafés, stores and restaurants in seven states.

Smith isn’t slowing down, either.

Dalai Sofia — named after his grandmother — recently added four hard kombucha cans to its lineup of nearly a dozen products, capitalizing on a growing trend in the drinks industry. A new fermentory and taproom could be next, said Smith, who remains bullish on the kombucha market.

“It’s an old world preservation method that’s full of live probiotics,” he said. “It really does change the dynamic of the flora of your gut.”

Kombucha is a probiotic-filled drink whose fans tout its many health benefits, from calming stomach issues to quelling anxiety. Science surrounding the fizzy beverage remains vague, though some studies have found it to have anti-inflammatory and anti-bacterial properties, among other benefits.

Smith, a certified sommelier, worked in restaurants before launching his business. He led the opening of Stars’ rooftop, now Satellite Bar, in Charleston, before moving to the U.S. Virgin Islands to work at The Longboard, which now has a second location on Sullivan’s Island. He stayed for four years and spent some time in Mexico City. Along the way, he adopted a healthier lifestyle.

A new craft brewery opened to the public on Sept. 21.

With high ceilings, long forest-green picnic tables and views of the yet-to-be-completed production space, Charles Towne Fermentory James Island harkens back to craft breweries of yesteryear.

Inside, guests clutch glasses of various shapes and sizes. Children frolic around the wide-open room, whose beer taps are located in the back left corner. Projection screens, plastered to a white brick wall, play soccer and football games. A tall garage door opens up to a parking lot with more tables and a food truck.

The new taproom and production facility joins Charles Towne Fermentory’s original location in Avondale and The Garden by Charles Towne Fermentory, a mostly outdoor beer garden at 1331 Ashley River Road, also in West Ashley.

Tucked in the back of the James Island Business Park just off Folly Road, Charles Towne Fermentory’s third Lowcountry destination is a welcome addition to James Island, where just one other brewery operates.

MOUNT PLEASANT — A new family-owned restaurant has made its debut at 1145 Johnnie Dodds Boulevard Suite 103, previously home to Asian Flavor.

Pho Lucky & Boba Tea is now open, serving bun thit nuong (vermicelli noodles), bun bo hue (spicy beef noodle soup), dumplings, summer rolls, pho and other Vietnamese entrees.

It’s owned by former Boeing employee Tin Pham and his wife Trang. The Phams were both raised in Vietnam and lived in the Seattle area before moving to Charleston.

Their restaurant’s menu as a whole represents northern, southern and central Vietnamese cuisine, Tin Pham said. Each bowl of pho — rice noodle soup with herbs and meat — takes about four hours to prepare but just a few minutes to exit the kitchen.

"We have that meal a lot in Vietnam,” he said, likening pho to eating a hamburger in the U.S. "It's a quick meal that people can stop by and have in five or 10 minutes.”

CHARLESTON, S.C. (WCBD)- The 2024 general election is quickly approaching, but South Carolina voters will not have to wait until Election Day to cast a ballot.

Governor Henry McMaster signed a law in May 2022 that replaces in-person absentee voting with an early in-person voting period for the two weeks leading up to election days.

Any registered voter, including those who will be 18 years old by the Nov. 5 general election, can cast a ballot during the early voting period without an excuse.

Early voting for the 2024 election begins on Monday, October 21, and ends on Saturday, Nov. 2.

Here’s what voters need to know:

The ballot will include seven candidates for president, according to officials:

An eighth candidate — Robert F. Kennedy Jr. — was initially nominated by the South Carolina Alliance Party. However, party leaders withdrew him from the ballot in August after he suspended his presidential campaign.

Additionally, each of South Carolina’s seven U.S. House of Representatives seats is up for election.

All 170 seats in the South Carolina state legislature — 124 in the House and 46 in the Senate — are also up for grabs this year. Some are uncontested, however.

Some ballots will also include races for county sheriff, circuit solicitor, probate judge, coroner, school board, and other countywide and local races.

Voters can find out who is on the ballot where they live by obtaining a sample ballot from the South Carolina Election Commission.

South Carolina adopted new state legislative district maps in December 2021 following the 2020 U.S. Census. Some district lines were redrawn, new districts were created, and some districts were eliminated.

Voters can find out which district they live in on the South Carolina legislature’s website.

Each county in South Carolina is required to have at least one polling location open for early voting. Some larger counties may have multiple open locations while smaller counties may have just one early voting site.

Early voting centers are open Monday through Saturday from 8:30 a.m. to 6 p.m. during the early voting period. Early voting is not available on Sunday, Oct. 27.

A valid photo ID is required to vote in South Carolina elections, including during the early voting period. Acceptable forms of identification include:

State law requires an individual to register to vote at least 30 days before an election.

The deadline to register for the 2024 election is Monday, Oct. 14.

There are several ways you can register to vote in South Carolina:

1 – South Carolinians can register online by visiting scvotes.gov before midnight on Oct. 14. You will need your South Carolina Driver’s License or DMV ID card.

2 – Download a voter registration form from scvotes.gov. Complete and return the form to your county voter registration office either by fax or email before midnight on Oct. 14, or by mail – but it must be postmarked by Oct. 14.

3 – Register in person at your county voter registration office. Remember: most offices close at 5 p.m. for in-office registration.

A popular South Carolina destination “punches well above its weight” — and earned a top spot on a national list.

Charleston again ranks No. 1 on a list of small cities that visitors love the most.

And it wasn’t the only place in South Carolina to be honored. Greenville landed at No. 5 in the rankings, which Condé Nast Traveler published Oct. 1.

To determine the nation’s top small cities and other readers’ choice award winners, the magazine conducted an online survey about people’s favorite vacation destinations. It gathered more than 575,000 votes from April through June.

“Candidates must receive a required minimum number of responses and a minimum overall rating to be eligible for a readers’ choice award,” the magazine wrote on its website. “Candidates are judged on a set of criteria relevant to their category, based on a standard five-point scale converted to a percentage: excellent, very good, good, fair, and poor.”

Though Charleston is the most populous place in South Carolina, it was considered a small city for the national rankings.

“Charleston may be a small town, but this city punches well above its weight,” the magazine wrote in its report. “When you consider everything it has to offer — history, culture, food, charm — it’s no wonder the so-called Holy City has repeatedly topped our list of the best small cities in the US.”

Charleston — home to about 150,000 people — also ranked No. 1 on last year’s Condé Nast Traveler list. At the time, the magazine considered a small city to be a place with fewer than 350,000 residents, McClatchy News reported.

The praise for Charleston continued this year, with the magazine again giving a nod to the waterfront destination’s “good looks” and “robust food scene.”

Also ranking high was Greenville, which the magazine called a “food lover’s town” with an emerging craft beer scene.

“Paired with its dynamic urban spaces are abundant natural resources, including 32-acre Falls Park, which runs through the middle of town, and the Swamp Rabbit bike trail — now at a whopping 22 miles and counting.”

The results were published after Hurricane Helene unleashed powerful winds in the Greenville area, knocking out power to thousands. Several of the city’s attractions remained closed days after the deadly late-September storm, The State reported.

Overall, Condé Nast Traveler said Chicago was the No. 1 big city in the United States. Following Charleston in the list of fan-favorite small cities:

South Carolina health inspectors found multiple violations at restaurants in the Charleston area in September, from kitchens filled with flies raw chicken dripping over a bag of sugar. The state regularly releases grades and inspection reports for food establishments in the Charleston area.

Here are the restaurants that received some of the lowest ratings in September.

Berkeley’s had an inspection on Sept. 5 and got a B grade.

An inspector observed an employee return from outside and start working with food without washing hands.

Marinara sauce and cooked pasta were seen not cooled properly. Cooked pasta and beef stock were seen kept past expiration dates. The back door to the dish room was not fully self closing, meaning pests could potentially get inside.

Salad prep cooler was seen in poor repair. Bio-film was seen inside the chemical dish machine.

The restaurant had a required followup inspection on Sept. 13 and got an A grade.

Hokkaido Sushi Hibachi had an inspection on Sept. 3 and got a B grade.

An inspector observed that the ice bin had an accumulation of organic matter.

Beef was seen floating and being thawed in soapy water while in its commercial packaging. Knives were seen stored between lids to the prep cooler. The chemical dish machine did not reach the required 120 degree minimum temperature. Layers of grease were seen on several pieces of equipment.

The restaurant had a required followup inspection on Sept. 13 and got an A grade.

Las Lupitas had an inspection on Sept. 25 and got a B grade.

An inspector observed raw chicken dripping over a bag of sugar. Also observed were flies in the kitchen area.

No cover was seen on meats in the cooler. Food items were seen thawing in standing water.

The restaurant had a required followup inspection on Oct. 4 and got an A grade.

Linda’s Taqueria Mexicana had an inspection on Sept. 6 and got a B grade.

An inspector observed an employee handling food without washing hands and an employee handling ready-to-eat tortillas with bare hands.

Food buildup was seen on shelving and a hand sink.

The restaurant had a required followup inspection on Sept. 13 and got an A grade.

Paisano’s Pizza Grill had an inspection on Sept. 9 and got a B grade.

An inspector observed an employee handle leaf spinach with bare hands.

Meatballs in red sauce were seen not kept at proper holding temperatures. An employee was seen working food prep without proper hair restraint.

The restaurant had a required followup inspection on Sept. 16 and got an A grade.

Pho Lucky had an inspection on Sept. 3 and got a B grade.

An inspector observed raw shrimp over raw vegetables in the walk-in cooler.

Clean dish ware was seen not being sanitized after washing and rinsing. Certain foods were seen not kept at proper holding temperatures. The back door was not tight fitting, meaning pests could enter. Food was seen stored on the floor of the walk-in cooler.

The white rice cooker was seen in poor repair.

The restaurant had a required followup inspection on Sept. 12 and got an A grade.

Señor Tequila had an inspection on Sept. 24 and got a B grade.

An inspector observed raw chicken stored net to boxed vegetables in the walk-in cooler.

Packages of guacamole, raw chicken, salsa and carnitas were seen uncovered in the walk-in cooler. Certain foods were seen not kept at proper holding temperatures.

Cutting boards were seen in poor repair with deep cut marks. Kitchen and bar floor in poor repair with multiple cracked tiles.

The restaurant had a required followup inspection on Oct. 4 and got an A grade.

The Coop at Palm had an inspection on Sept. 11 and got a B grade.

An inspector observed an excessive amount of fruit flies in the kitchen. Also observed was a large hole on the bottom left of the back door.

The front pastry display was seen with no date labels on products. Shelled eggs were seen out of the cooler on the main cook line with no time stamp.

Produce and bacon boxes were seen stored on the floor of the walk-in cooler. A vape module was seen sitting on the kitchen cutting board. Food buildup was seen on the can opener blade.

The restaurant had a required followup inspection on Sept. 17 and got a B grade.

Yamato had an inspection on Sept. 24 and got a B grade.

An inspector observed shrimp stored on the floor of the freezer.

The middle cooler at the sushi bar was seen in poor repair. Tile floors were seen in poor repair. Dust and grease were seen in the ventilation hood systems.

A required followup inspection has not yet been held.
